Ingredients

  • 2 cans or 10 oz of water-packed tuna, drained
  • 3 tablespoons olive oil
  • 2-3 tablespoons fresh chives, chopped
  • 1/2 red pepper, diced finely
  • 1/2 cucumber, diced finely

  • 1 1/2 cups fresh baby spinach, chopped into small pieces (smaller than I did here is better)
  • 1 tablespoon lime juice
  • 4. Serve on top of toasted crusty bread, rubbed with more olive oil and a little bit more salt
