  • 2 tablespoons tomato paste
  • 3/4 cup (3-4 ounces) pine nuts
  • 2 large garlic cloves, peeled
  • 1/2 cup fresh oregano (basil can be substituted)
  • 1 cup fresh Parmesan cheese plus more for garnishing (grated)
  • 2 tablespoons olive oil
  • 1 medium onion, peeled and finely chopped
  • 1 1/2 cups chicken or vegetable stock
  • salt and pepper, to taste
  • 1/2 cup Panko-style bread crumbs, seasoned
