Superfood chocolate chip oatmeal cookies

  • 15 mins Cook time 30 mins Total time 45 mins Sugar free, dairy free Author: Yvonne | Recipe type: Baked goods Serves: 25 Ingredients 1 large egg ⅓ cup coconut oil, melted 3 tbsp unsweetened almond milk ¾ cup Natvia, or granulated sweetener of choice 1 tbsp vanilla extract 1 tsp cinnamon Pinch of salt ½ cup [a href="”]Blendco superfood blend[/a], or shredded coconut 1 cup rolled oats 1 cup wholemeal flour 1 tsp baking soda ½ cup dark chocolate chips Instructions Preheat oven to 175c. Line 2 baking trays with parchment paper and set aside. In a large mixing bowl, whisk together egg, coconut oil, almond milk, Natvia, vanilla, cinnamon and salt. Add Blendco, oats, flour and baking soda. Stir until just combined. Fold in chocolate chips and mix until well-distributed throughout dough. Roll dough into balls and flatten with the palm of your hands to desired size - these cookies don’t spread very much, so feel free to place them closer together. I used about 2 tbsp of dough per cookie. Bake in preheated oven for 8-10 minutes Allow cookies to cool on baking trays for 5 minutes, then transfer to a wire rack to continue cooling.
