Ingredients

  • 10 minutes prep + grain/lentil cooking time

  • 1/2 cup dried french green lentils, rinsed
  • 1/2 cup uncooked quinoa, rinsed very well
  • 1 1/2 cup water
  • 1/2 bunch kale, stem removed and chopped
  • 1/2 red bell pepper, finely chopped
  • 1 head broccoli, stem removed and roughly chopped
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, chopped
  • 1/3 cup plain hummus
  • 1/4 cup water, more to thin
  • 2 Tbsp fresh lemon juice or apple cider vinegar
  • 1 Tbsp ground flaxseed
  • black pepper to taste
