  • 10 pancakes of 10 cm in diameter
  • 1 cup flour
  • 1 tablespoon standard sugar
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 tablespoon melted butter
  • 2 teaspoons vanilla essence
  • 3 organic eggs
  • 1 ¾ cup organic milk at room temperature
  • Butter for cooking pancakes
  • Icing sugar to serve
  • Fruit to serve


    Sift flour, sugar, salt, and cinnamon
    In another bowl mix the melted butter, milk, eggs, and vanilla essence
    Mix the dry with the wet ingredients
    In a very hot pan to make pancakes of ¼ cup measure, add half a tablespoon of butter and wait until it changes color and begins to smell like nuts
    Add ¼ cup of the dough and cook. The mixture should begin to bubble and brown immediately
    Repeat with the rest of the dough
    Serve with icing sugar, jam and/or fruit
