Ingredients

  • 70 g egg yolks, about 4-5 large*
  • 60 ml oil, preferably Alfa One rice bran oil
  • 60 ml milk
  • 100 g self raising cake flour, with 8% protein
  • 1/4 tsp salt
  • 70 g salted duck egg yolks, from 4 eggs**, roughly mashed with a fork to form fine crumbs
  •  
  • Team white
  • 200 g egg whites, about 5-6 large*
  • 80 g sugar
  • * It is important to weigh the egg yolks and egg whites.
  • **4 standard sized salted duck eggs is about 70g, fully cooked, shelled and use egg yolks only
