  • 2 cups mashed roasted sweet potato (about 2 medium sweet potatoes)
  • 1/2 cup chopped pineapple
  • 2 teaspoons vanilla extract
  • 1 cup water, divided
  • 3 teaspoons plain powdered gelatin
  • 3 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla bean paste (extract may be substituted)
  • 26 roasted salted pecan halves
