Ingredients

  • 1 Tablespoon coconut oil
  • 2 cloves garlic (whole)
  • 3 cups sweet potato (about 2 average sweet potatoes)
  • 1 Tablespoon olive oil
  • ¼ cup white onion, diced small
  • 2 ½ cups vegetable stock
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ cup parsley (optional)
  • ¼ cup hummus (storebought, or this recipe)
  • Crispy Sesame Chickpeas
  • 1 Tablespoon grapeseed oil
  • 1 can chickpeas, drained and rinsed
  • 2 Tablespoons sesame seeds
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
