Ingredients

  • 45 minutes
  • 6 large swiss chard leaves
  • 1 egg
  • 1/2 cup red wine
  • 6 large Swiss chard leaves, washed, dried, stalks cut off and kept intact
  •  
  • For the vegetable filling
  • 1 cup thinly sliced onion
  • 2 tablespoons finely chopped garlic (about 6 cloves)
  • 1- pound thinly sliced Crimini mushrooms
  • 3/4- pound white potatoes (about 1 medium potato), washed, dried and cut into bite-sized, thin slices
  • 6 thinly sliced Swiss chard stalks
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 cup red wine
  • 1 (28-ounce) can crushed tomatoes
  • 1 tablespoon plus 1 teaspoon brown sugar
  • Sea salt and freshly ground black pepper
  •  
  • For the cheese mixture
  • 4 cups skim Ricotta cheese
  • 1 large egg, lightly blended
  • 1/2 cup roughly chopped fresh basil leaves
  • 2 tablespoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon sea salt and a few turns of black pepper
  • 14- ounces grated Mozzarella cheese
  • Olive oil for the pan
