Ingredients

  • 1 kg chicken portions (I used chicken thighs)
  • 2 tbsps fish sauce
  • 1 tbsp light soy sauce
  • 1/4 tsp of freshly ground black pepper
  • 2 tbsps of cooking oil
  • 3 cloves of garlic, crushed
  • 1/4 c tamarind puree or ready bought concentrate
  • 2 stalks of lemon grass, smashed
  • 1 tbsp brown sugar
  • 1 c coconut milk
  • 1-2 green chillies, sliced diagonally
