Ingredients

  • Curry Paste
  • 4 Tbsp Green Curry paste
  • 4 cloves garlic, chopped
  • 1/2 onion, chopped
  • 1 bunch coriander
  • 1 tsp cumin
  • 1 red chili, chopped
  • 1/4 tsp chili powder
  • 1 tsp lemon grass
  • L (14 oz) coconut milk
  • 5 cups low sodium chicken stock
  • 400 g (1 lbs) chicken thighs, cubed
  • 1/2 onion, diced
  • mixed vegetables of your choice (eg beans, peas, bell peppers, mushrooms)
  • 200 g (7 oz) egg noodles (cooked and drained)
  • lime zest + 2 Tbsp juice
  • 1/4 Cup fish sauce
  • 1 Tbsp brown sugar
