Ingredients

  • 13 oz (375 g) whole grain linguini pasta
  • 2 tbsp extra virgin olive oil
  • 1 leek, thinly sliced (white and pale green parts only)
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 carrot, grated
  • 1/2 cups frozen shelled edamame
  • 3/4 medium red cabbage, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup roasted salted peanuts
  • 1/4 cup thinly sliced fresh chives
  • Dressing
  • 1/4 cup smooth natural peanut butter
  • 1/2 tsp lime zest
  • 1/4 cup lime juice
  • 2 tbsp toasted sesame oil
  • 1 tbsp maple syrup
  • 3 tbsp sodium-reduced tamari (I used soy sauce)
  • 2 tbsp balsamic vinegar
  • 1 tsp hot sauce
