  • 12 medium garlic cloves, minced (1/4 cup)
  • 2 inches fresh ginger (about 2 inches)
  • 2 tablespoons ground black pepper
  • 2 tablespoons ground coriander
  • 2/3 cup fresh cilantro leaves, chopped
  • 1/4 cup lime juice, from 2 to 3 limes
  • 2 tablespoons vegetable oil, plus more
