  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons Thai red curry paste (or curry powder)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 large sweet potato, peeled & diced (about 12 oz)
  • 2 cups chicken stock or 2 cups vegetable stock
  • 2 cups coconut milk
  • 4 ounces shelled cooked crabmeat (about 1 cup)
  • 1 small roasted red pepper, diced
  • salt & pepper
