  • 2 lbs (about 3 medium) sweet potatoes, peeled, and cut into 1 inch pieces
  • 1/2 tsp Coarse Sea Salt, plus more for finishing
  • 2 tablespoons vegetable or canola oil
  • 1/4 tsp ground black pepper
