Ingredients

  • 1 single pie crust (click here for my all-butter perfect pie crust recipe)
  • 1 tablespoon all-purpose flour
  • 4 cups rhubarb, chopped
  • 2 cups peaches, peeled, pitted and sliced (about 4 medium peaches)
  • 1 1/2 cups sugar
  • 1/3 - 1/2 cup minute Tapioca
  • juice and zest of 1 lemon
  •  
  • crumble topping
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup old-fashioned rolled oats
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 2 tablespoons unsalted butter
  • 4 ripe peaches, peeled and chopped
  • 1/2 cup brown sugar
  • 2 tablespoons Captain Morgan Original Spiced Rum
  • 1 cup 2% buttermilk
  • 2 cups heavy cream
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla
