  • 2 cups dark spiced rum ½ cup fresh lime juice ½ cup Worcestershire sauce ½ cup apple cider vinegar

  • 3 tbsp minced fresh ginger (TIP: I freeze my ginger so that I can quickly and easily grate it. This is way simpler and easier than mincing it. When you buy your fresh ginger, remove the outer skin by scraping it off with a spoon. Put it in a freezer bag and let it completely freeze. Use!) 2 tbsp minced fresh garlic 1 tsp minced and de-seeded fresh habanero pepper (use gloves.) 8 tbsp sugar 1 tbsp crushed red pepper 1 tbsp nutmeg 1 tbsp cinnamon 1 tbsp dried onion 1 tsp ground black pepper 1 tsp dried ground thyme 1 tsp allspice

  • Dressing
  • 2 tsp fresh minced ginger ½ tsp salt ½ tsp ground black pepper Combine ingredients in a mixing bowl and whisk until the oil mixture is emulsified. Lucky J’s Jamaican Citrus Slaw 2 cups julienned napa cabbage 1 cup julienned red cabbage 1 cup julienned jicama 1/3 cup chopped cilantro 1 tsp minced habanero pepper ¾ cup Lucky J’s Jerk Dressing Toss all the vegetables thoroughly in a large bowl while adding the dressing to your desired consistency, about ¾ of a cup.
