  • 4 dried guajillo chilies 2 dried pasilla chilies, stemmed (also found as chili Negro) 3 quarts chicken stock 3/4 pound boneless, skinless chicken thighs 2 tablespoons vegetable oil 1 small onion, diced 2 cloves garlic, minced 2 teaspoons ground cumin crunchy fried tortilla chips (see recipe below) 2 cups chopped plum tomatoes 1/2 bunch cilantro, leaves and tender stems picked off for garnish juice of 4 key limes, substitute juice of 2 limes, plus extra juice and limes for garnish kosher salt 1/4 pound queso fresco, crumbled 2 firm but ripe avocados, sliced
