  • 9 Comments · In Baking, Recipes, Tiny Farmhouse Kitchen I stumbled across an absolutely charming person who loves to bake on you-tube, he named his channel “The Baking Chin” (his name is Ian Chin). He is doing a kind of riff on The old Julia Child style and I find him delightful (hilarious). He is very funny (clearly not taking himself too seriously) but really does love to bake and shares some very nice recipes. A few days ago I watched him make a Viennese baguette and was so intrigued that I scribbled the recipe down and bumped making it to the top of my list (I keep a running list of food and recipe ideas…it’s pages long). I get an idea for a recipe in the middle of the night and have to write it down right away because by morning I will have forgotten…that didn’t used to happen….is it really possible I’m getting “slightly” older? Nah….I just blame my kids.
  • 3 cups of all-purpose flour
  • 2 teaspoons instant yeast
  • 2 Tablespoons milk (warm but not hot)
  • 1 teaspoon sugar
  • 4 tablespoons butter (softened)
  • 2 eggs beaten
  • 2 1/2 teaspoons fine sea salt
  • 2 hours Covered of course. Below is what it looked like after 2 hours
  • 4 or 5 short angled slits in the dough with a lame or a serrated knife…
