Ingredients

  • 1/2 cup chopped sun-dried tomatoes
  • 3 TBS butter
  • 1 small onion, chopped
  • 2 packages frozen spinach (6 ounces each), thawed
  • 3/4 cup roasted red peppers (jarred or homemade), chopped
  • 1 tsp kosher salt
  • 10 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 2 TBS Dijon Mustard
  • 3/4 cup ricotta cheese
  • 2 cups gruyere cheese
  • 1 cup parmesan (or more if desired)
