To put my own twist on it, I decided to make my version with tilapia instead of chicken. This dish is my spin on a traditional Italian dish, chicken piccata, which is chicken cooked in a lemon butter sauce and topped with briny capers
Season chicken with salt and pepper, then dredge the pieces in flour. Shake off excess flour. Heat 1 tablespoon olive oil in large skillet over medium-high heat
Add tilapia fillets (thawed if frozen) to the pan. Saute the tilapia until the fillets are opaque and easily flake with a fork (I usually turn once during cooking)
Season the chicken tights with salt and pepper. In a skillet add the butter and heat over medium-high. Sauté the chicken tights for 5 to 6 minutes on one side
Place tilapia fillets on a baking sheet, season fish with a good amount of salt and pepper. Top tilapia fillets with tomatoes and mushrooms, sprinkle with parsley over the top
3 tilapia fillets (about 1 lb). Place fish in a glass pan and preheat oven to 350. Combine and melt the butter and lemon juice in the microwave, then pour over the fillets
Place chicken in zip-top bags and pound with a meat mallet or rolling pin until 1/4-inch thick. Remove chicken from bag and season all over with salt and black pepper
I recently tried Bumble Bee SuperFresh® Tilapia with Lemon, Pepper & Herbs and Bumble Bee SuperFresh® Salmon with Garden Pesto and I have to tell you I LOVE these products
Sprinkle the spice rub evenly over both sides of the tilapia fillets. Combine the paprika, brown sugar, oregano, garlic powder, cumin, cayenne pepper and salt in a small bowl
