Ingredients

  • 1 1/2 Ibs - boneless pork shoulder, cut into 2-inches, water to cover
  • 1 small onion
  • 2 cloves garlic, peeled
  • 1 bay leaf
  • 1/4 Ib Mexican chorizo
  • 3 onion, cut into rings
  • 3 cloves garlic, crushed and chopped
  • 3 tomatoes, peeled seeded and chopped.
  • 1-2 canned or bottled pickled chipotle chiles, chopped
  • 1 T dried oregano
