Toasted Coconut Cookies (Again)

Ingredients

  • 1 cup coconut oil 1¼ cups granulated sugar 2½ cups all-purpose flour 2 tsp vanilla 2 eggs, room temperature 2 tsp baking powder ¼ tsp. salt ¾ cup unsweetened toasted coconut Instructions Preheat oven to 350F. Line a baking sheet with parchment paper. Add the coconut oil and sugar to the bowl of your stand mixer. Beat until light and fluffy, about 5 minutes. Beat in one egg at a time, making sure the previous is fully combined before adding the next. Stir in vanilla. In a separate bowl, sift together the flour, baking powder,and salt. Stir into the wet ingredients until just combined. Stir in your toasted coconut. Measure out tablespoon-sized pieces of dough and roll into balls. Bake for 8-10 minutes, or until slightly golden. Allow to cool slightly on baking sheet before moving to a wire rack. 3.2.2802
