Ingredients

  • 3 medium apples
  • 1 tbsp dark brown sugar
  • 12.3 oz plain
  • 11.6 oz dark brown sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp mixed spice
  • 1/4 tsp ground cardamom
  • 1 tbsp baking powder
  • 1 tsp bicarbonate of soda
  • 3 large eggs
  • 7 oz cold unsalted butter
  • 7 oz quark cheese
  • Mascarpone frosting
  • 450 g | 1lb mascarpone cheese
  • 300 g | 10oz icing (powdered sugar)
  • 2-3 tbsp of the toffee sauce
  • To decorate (optional)
  • 1 apple sliced into thin disks, seeds removed
  • 2 tbsp sugar
  • ground cinnamon to dust
  • 100 g | 3.5oz light brown sugar
  • 1/2 tsp vanilla extract
