Tomato bisque

  • 6 servings
  • 1 ½ cups chopped onion
  • 1 cup carrot in pieces
  • ¾ cup celery in pieces
  • 800 gr pureed tomatoes
  • 1 tablespoon paprika
  • 2 garlic clove
  • 3 cups organic chicken broth
  • 2 teaspoons chopped fresh basil or 3 dried basil
  • Salt and pepper to taste
  • 3 tablespoons olive oil


    In a pot heat the oil and fry the onion, carrot, and celery for 5 minutes until the vegetables begins to soften
    Add the paprika and fry 1 minute
    Add the pureed tomatoes and broth
    Bring to a boil for 10 minutes
    Add the basil and season with salt and pepper
    Blend the soup and strain with a fine mesh strainer
    Return to the same pot
    Season with salt and pepper if needed and cook for 5 minutes
    If it is too thick, add a little more strained broth
