Ingredients

  • 4 (10-inch) flour tortillas
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 jalapeño peppers, seeded and diced
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 large zucchini, quartered lengthwise and sliced
  • 1 1/2 cups cooked black beans (or one 15 ounce can, rinsed)
  • 1 (10 ounce) package frozen corn
  • 1 (12 ounce) bottle beer (I used pilsner) or 1 1/2 cups vegetable broth
  • 1/3 cup sliced black olives
  • Salt and pepper to taste
  • 2 1/2 cups shredded Mexican blend cheese
  • Chopped cilantro, green onions, lime wedges, salsa, and sour cream for serving
