Ingredients

  • 3 ½ doz. Soft Ladyfingers
  • Cinnamon Pastry Cream
  • Caramel Sauce
  • Roasted Fruit
  • 1/3 cup dry sherry
  • 2 cup chilled whipping cream
  • 2 Tbs. sugar
  • 1 tsp vanilla extract

  • 6 egg yolks
  • 2 cups milk
  • ¾ cup sugar
  • 1/2 cup cake flour
  • 2 tsp vanilla extract
  • 1 ½ tsp ground cinnamon
  • 2 Tbs. unsalted butter
  • Caramel Sauce
  • 1 cup sugar
  • 1/3 cup water
  • 1 cup cream
  • 2 tsp vanilla
  • Pinch of salt
  • Roasted fruit
  • 3 large Fuji Apples, peeled, cored and cut into ½ inch cubes (about 4 cups)
  • 3 Bosc pears, peeled, cored, cut into ½ inch cubes, (about 3 cups)
  • 2 Tbs. fresh lemon juice
  • 2 Tbs. unsalted butter, melted
