Ingredients

  • Makes 25-30 cookies
  • 2 ¼ cups all purpose flour
  • 2 tsp baking soda
  • 1 ½ tsp. ground ginger
  • ½ tsp. ground cinnamon
  • ½ tsp. ground allspice
  • ½ tsp. ground pepper
  • ½ tsp. salt
  • ¾ cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 1 tsp finely grated fresh ginger
  • 1 large egg, at room temperature
  • ¼ cup fancy molasses
  • ¼ cup finely diced crystallized (a.k.a. candied) ginger
  • Coarse turbinado sugar, for rolling
