I love using fruitsand other ingredients to make my holiday meals look super festive. This festive winter wild rice saladwith roasted squash, pomegranateand orange maple vinaigrette is full of flavor and the perfect side to compliment your holiday meal
Spread in a single layer and sprinkle with thyme, salt and pepper. Mix shallot, pomegranate molasses, vinegar, lemon juice, thyme (or tarragon) and salt in a small bowl
As much as I like winter squash, I’m a little tired of squash purees, and really enjoyed the roasted butternut squash with its browned, caramelized edges

Now when I make salads I also like my salads simple, though every once in a while you’ll catch me throwing in some berries, or mangos or some sort of fruit in my salads, I like to stick to simple dressings like olive oil and lemon or balsamic vinegar
Top with additional pomegranates, cranberries and walnuts as desired, serve and enjoy. In a large bowl, mix together the kale, quinoa, pomegranate seeds, dried cranberries and walnuts
Frozen fruitsalad is a classic frozen dessert, quite refreshing for a hot day, and a favorite of busy moms as an alternative to ice cream without the churning
You can toss some in any saladand it becomes even more appealing as in our favorite Citrus Caramelized Brussels Sprouts, which is a wonderful fall or wintersalad
Kale and Quinoa Saladwith Lemon Vinaigrette – words cannot describe how good this salad is. Now you have to realize here, I’m a food blogger, I’ve tasted and tried many salads in my day, so it’s hard to surprise me with something when it comes to food
