Ingredients

  • 255 grams all-purpose flour
  • ¾ teaspoon salt
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 255 grams freshly grated carrots (use a food processor or cheese grater)
  • 75 grams shredded unsweetened coconut
  • 400 gram (14 oz.) can of chopped pineapple, drained
  • 50 grams pecans, chopped roughly
  • 4 eggs
  • 350 grams sugar
  • 8 oz package) cream cheese, room temperature
  • 85 grams (3 oz.) unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • 560 grams (1 ¼ pound) powdered sugar
  • 5. Spoon batter into the cake pans and bake
