Tuna carnitas tacos

  • 6 servings
  • 800 gr fresh tuna cubes
  • 1 cup orange juice freshly squeezed
  • 1 tablespoon garlic powder
  • ½ tablespoon kosher or ground grain salt
  • Avocado oil for frying
  • Tortillas to serve (I used beet tortillas from Adamá tortillas)
  • 2 avocados
  • 1 tablespoon lemon juice
  • Salt to taste
  • 3 green tomatoes
  • 1 serrano or cuaresmeño chili (if you want it more spicy add chili to taste)
  • 1 20 gr piece onion
  • ¼ cup cilantro
  • Salt and garlic powder to taste
  • Red onion to serve
  • Chopped cilantro to serve
  • Lemon to serve


    In a deep extended plate add orange juice, garlic powder, salt, and garlic powder
    Add the tuna cubes and cover with the orange juice moving constantly so that everything is covered
    Marinate for 1 hour
    Heat a pan until very hot
    Add some avocado oil
    Drain the tuna cubes
    Fry until golden on all sides taking care that the pan is not very over crowded so that it does not boil
    Serving on a plate
    Smash the avocado with the lemon and salt and put on a serving dish
    Blend the green tomatoes, onion, coriander, chilies, garlic powder, salt, and pepper to taste until you have a sauce. Serve in a saucer
    Serve the carnitas with tortillas, avocado, lemon, red onion, and green sauce
