Add steak and spoon over marinade. (I usually fry or barbecue the steak). When ready to cook remove meat from marinade, pat dry with paper towels and cook as usual

When ready to cook, lift from the marinade and sprinkle with black pepper. Heat a grill pan or a frying pan (not using any oil or butter) until really hot and sear the steaks for several minutes on both sides to your likeness but do not over-cook them
Remove steak from marinade (discard marinade). Add steak and turn to coat. Place steak on grill and cook for 4 to 5 minutes per side for medium-rare. Transfer steak to a cutting board and let rest for 5 minutes
