  • 1/2 cup sour cream
  • 1 tablespoon minced shallot
  • 1 small onion
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons unsalted butter
  • 2 1/2 tablespoons cornstarch
  • 1 large sweet onion
  • 1/3- cup mounds of the potatoes onto a parchment paper
  • 1/4 inch thick
