Ingredients

  • 9 essential amino acids, they are commonly combined with rice to make a "complete protein"
  • 1 cup
  • 7 mg iron,
  • 350 mg phosphorus, and
  • 5 mg zinc
  • 1 cup
  • 4.6 mg iron,
  • 2 green onions, sliced thinly, divided in half
  • 1 garlic clove, minced
  • 2/3 cup lentils
  • 1/3 cup quinoa
  • 2 cups vegetable broth
  • 1/2 large lemon, sliced thinly
  • 1 generous pinch saffron
