Ingredients

  • 2 & 1/2 cups cake flour*
  • 1 cup ube (purple yam), cooked and finely grated**
  • 1 cup white sugar
  • 7 egg yolks, lightly beaten
  • 7 egg whites
  • 3/4 cup milk
  • 1/2 cup corn syrup***
  • 1/2 cup vegetable oil
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • Blue & red food colouring (optional)
  • 1 very ripe mangoes, puréed
  • 1 package (250g) cream cheese, softened
  • 100 g unsalted butter, softened
  • 1 cup confectioners’ sugar
