Ingredients

  • For the Ube chiffon cake
  • 8 eggs,( separate white from egg yolks)
  • 1 cup and 1/2 cup sugar
  • 1/2 cup milk
  • 4 tbsp canola oil
  • 4 teaspoons ube extract ( I used flavocol)
  • 1/2 tsp cream of tartar
  • 1 and 1/2 cups cake flour
  • 1 tbsp baking powder
  •  
  • For the White Chocolate Coconut Frosting
  • 400 ml coconut milk
  • 1 cup white chocolate, finely chopped
  • 1 cup unsweetened shredded coconut
  • 2 8 oz blocks of softened cream cheese
  • 1/2 cup whipping cream
  • 1/2 cup icing sugar
  • more shredded coconut for toppings
  • some crumbled ube cake, for decoration ( optional)
