  • 1 cup (125 g) unbleached flour
  • 2 tbsp unsalted butter
  • 1 egg, lightly beaten
  • 2 tbsp sugar
  • Pinch of salt
  • 1 tbsp water
  • 1 beaten egg, to seal ravioli
  • Zest of 1 lemon
  • 1 tsp cinnamon
