Ingredients

  • 2-4 tablespoons olive oil
  • 2 pounds boneless pork shoulder, trimmed of excess fat and cut into 1-inch cubes
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 sweet yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 bay leaf
  • 1/2 cup white wine
  • 1 1/2 cups orange juice
  • 2 tablespoons dark brown sugar
  • 2-3 medium potatoes, any kind
