  • You Need: (yield: 6 cupcakes)
  • Vanilla Cupcakes (modified from The Girl Tastes, 2008)
  • 2/3 c flour
  • 1/2 tsp baking powder
  • pinch of salt
  • 4 tbsp milk
  • 1/2 tsp vanilla
  • 1/3 c butter, softened
  • 1/3 c sugar
  • 1 egg Blackberry Buttercream Icing
  • 1/3 c butter
  • 1/2 tsp vanilla
  • 1/3 c blackberry jam or preserves (cut to 2 tbsp for thicker icing)
  • pinch of salt
  • 2 c icing sugar
  • 1 tbsp milk (3 tsp.)
