Vanilla Cupcakes with Vanilla Bean Ricotta Cream Frosting

Ingredients

  • 5 tbls room temperature butter
  • 3 tbl granulated sugar
  • 3 egg yolks
  • 3 large egg whites
  • 1 tbl vanilla extract
  • 1 1/4 cup cake flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1/4 cup milk
  • 1/4 sour cream
  • 2 tbl oil
  • 1/4 cup sugar an beat until firm but not dry

  • 5 minutes While your butter is creaming sift together flour, baking powder, baking soda and salt, set aside
  • 1 1/2 cup heavy cream
  • 1 cup ricotta
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • or vanilla bean paste
  • 2 1/2 tsp gelatin
  • 1 1/2 tbl cold water
  • 5 minutes, then microwave on high for 5 seconds,up to 10 seconds stir and
  • 1 cup ricotta
  • 1 tbl vanilla bean paste and continue whipping for about 15-20 seconds, or just until until stiff peaks are
