Vegan Cheddar Dip with Coconut Bacon and Kale

Ingredients

  • 1 tbsp oil (vegetable or olive is fine)
  • 2 cups unsweetened coconut flake
  • 1½ tbsp tamari (or soy sauce if not GF)
  • 2 tsp liquid smoke
  • 1 tbsp maple syrup
  • 1 small onion, finely diced
  • 3 cloves garlic (whole)
  • 3 cups kale leaves
  • 2 tbsp olive oil, divided
  • ½ cup raw cashews, soaked for 20 mins in hot water
  • 1 cup almond milk
  • 2 tbsp apple cider vinegar
  • ¼ cup nutritional yeast
  • 1 tsp sea salt
  • ¼ tsp chili flakes
  • 2 tsp Dijon mustard
  • 2 tbsp tapioca starch
  • 1 14 oz. block tofu (silken or regular will both work, silken makes it creamier)
  • 1 tbsp white miso (optional)
  • ¼ cup sundried tomatoes
  • ½ tsp smoked paprika
