Cashew cream is basically a yummier, healthier, vegan-er way to get your cream sauce fix. I want to eat this cashew cream with ALL my spoons at ONE TIME because it is SO FREAKING AMAZING
The trick to this creamy vegan pasta treat is cashew cream. I’ve used cashew cream before, mainly in soups, but I honestly did not think the cashew cream sauce would turn out the same consistency as a dairy cream sauce
Add in the sea salt, cumin, fresh ginger, garlic, and crushed red pepper flakes. Transfer the cashew cream to a bowl and stir in the chopped basil, oregano, and thyme
Put the cashew nuts in the food processor Blend the cashew nuts until they turn into fine powder Add the garlic, cumin and nutritional yeast Blend until the cashew turn into a nut butter If you like a thick butter take the butter out
Put milk and butter in a pan and let the butter dissolve Then put flour, garlic, onion, parsley, milk and butter mixture in the food processor Combine into a flexible dough Knead the dough and wrap it in foil before you let it rest for 30 minutes Cut into 10 pieces and knead each piece thoroughly Roll up a tortilla Heat the frying pan and brush with oil Bake the tortilla flatbread for about a minute until dark spots are visible
Place the remaining ½ cup blanched and peeled almonds, cashew nuts, cilantro, olive oil, garlic, and salt in a blender or food processor or jug if using a stick blender, and blend it to fine or course paste as per your preference
Top with half of the béchamel sauce and spread to coat evenly. Looking for vegan Thanksgiving sides. This yukon gold potato gratin with cashew béchamel and shiitake mushrooms is sure to please everyone at your table
You can also add a few shakes of vegan parmesan for extra flavor at this time if you wish. Serve immediately and garnish with extra black pepper, fresh basil and/or vegan parmesan cheese
