Ingredients

  • 2 medium-sized apples, peeled and diced (about 2.5 cups worth)
  • 1/2 tsp cinnamon
  • 3/4 c + 1 Tbsp unsweetened apple or orange juice
  • 1/4 c extra virgin olive oil (or dairy-free butter, melted)
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla
  • 1 1/4 c white rice or brown rice flour
  • 1/2 cup tapioca starch
  • 1/2 tsp xanthan gum
  • 1/2 c brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp ground cardamom (optional. I rarely have it handy)
  • 1/4 cup brown sugar
  • 1/8 tsp salt
  • 4 Tbsp white rice flour
  • 1/4 tsp cinnamon
  • 3 Tbsp dairy-free butter, melted
