Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 large onion, diced
  • 1 garlic clove, minced
  • 1/2 tbsp curry
  • 1 tsp dried thyme
  • 2 cups autumn lentil blend
  • 1 small buttercup or butternut squash, peeled and cubed
  • 5 + cups water or vegetable broth (less water for stew consistency, more water for a soup)
  • 1 14 oz can crushed tomatoes
  • Salt and pepper to taste
  • Holiday Rice
  • 2 cups brown basmati rice or brown rice and wild rice blend, rinsed and cooked in advance
  • 4 cups water
  • salt to taste
  • 2 tbsp olive oil
  • 1 large onion diced
  • 2 carrots, diced
  • 2 celery, chopped
  • 8 fresh sage leaves, chopped
  • 1 cup fresh cranberries
  • 1 cup currants
  • 1 cup toasted sunflower seeds
