Ingredients

  • Ingredients:Curd
  • 1 cup lime juice (you're looking at about 7-10 limes, you can use extract, but it won't be as delicious)
  • 1 cup sugar
  • Juice of one lemon
  • 1/4 cup butter (we used Earth Balance)
  • 3 TB corn starch dissolved in 3 TB cold water
  •  
  • Crust
  • 2 cups crushed graham crackers
  • 1/3 cup sugar
  • 1/4 cup flour
  • 1 stick butter
  • 2 tsp cinnamon
  •  
  • Cheesecake
  • 2 8 oz containers of vegan cream cheese, I used Trader Joes but you can make your own!)
  • 1 cup white sugar
  • 1/2-3/4 cup lime curd
  • 1/2 cup flour
  • 1 tsp vanilla extract
