Ingredients

  • For Nacho Sauce
  • 1 c. Raw Cashews (dry)
  • 1 1/4 c. Water (plus 1/2c. water for later)
  • 1 Lemon- juiced
  • ¼ tsp. Paprika
  • 1 ¼ tsp. Sea Salt
  • 2 Cloves Garlic
  • 1- 4 oz. Jar Sliced Pimentos (including liquid)
  • 1/4 c. Nutritional Yeast
  • ¼ tsp. Chili Powder
  • ¼ tsp. Ground Paprika
  •  
  • For The Waffle Batter
  • 1 c. Brown Rice Flour
  • 1 1/2 c. Organic Millet Flour*
  • 1/2 c. Garbanzo Bean Flour
  • 1 c. Tapioca Starch
  • 2 c. Non-Dairy Milk
  • 1 c Coconut Oil (liquid/melted)
  • 1 tsp Apple Cider Vinegar
  • 8 tsp Baking Powder
  • 1 tsp Sea Salt
  • ½ tsp. Chili Powder
  • ½ tsp. Paprika

  • Toppings
  • 1 box Mexican Flavored Jack Fruit (easily found at all health food stores)
  • 16 oz container Guacamole or 1- Avocado Sliced
  • 1/2 c Cilantro Chopped
  • 1 c. Salsa
  • Half of a Red Pepper Chopped
  • 1/8 c. Red Onion Chopped
  • 1-2 Radishes Sliced Thin (optional)
  • 2- Limes (for squeezing on more flavor)
