I started by sautéing red bell pepper and onions and then I added garlic. The original name of this post was Caribbean RiceandBeans, but since I’ve never actually been to the Caribbean, I thought the name was a less than wise choice
OR – in a real pinch – buy some jarred or other pre-made Pad Thai sauce. This is pretty spicy & quite delicious and, due to the tamarind, has a very different flavor from most of the other Asian vegan chicken dishes I have posted
My version is for a simple take on RedBeansandRice, using my Hamilton Beach Rice Cooker. Place all of the ingredients in the rice cooker and press WHITE RICE
In New Orleans, cooking RedBeansandRice on Mondays is a long-standing tradition. Focus could be put on getting the wash done, with just a check here and there on the redbeans

No I am not an expert on RiceandBeans in South, but an expert on spicing it up. Add cooked rice in a bowl with the beans toss with all seasonings add olive oil, blend together
When beans are cooked turn off heat. steamed rice or boiled rice. Drain soaked beans in a colanderand place them with all other ingredients except rice into a heavy 8-10 quart pot, adding just enough cold water to cover. Bring to boil over high heat, then lower heat and simmer uncovered for 2 1/2 to 3 hours or until beans are tender and a thick, natural gravy has formed. To serve, ladle about 1 1/2 cups of beans, meat and gravy over a serving of rice. 2 lbs dried red kidney beans, soaked overnight in cold water. 1/8 teaspoon crushed red pepper pod
