  • 2-3 cloves garlic, minced
  • 1 teaspoon ground ginger, or 1 Tablespoon fresh ginger, minced
  • 2 Tablespoons red curry paste
  • 1 small sweet potato, peeled and chopped into 1 inch pieces
  • 6 ounces portobello mushrooms, sliced
  • 3-4 green onions, sliced thin
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 package (4 ounces) vermicelli noodles
  • 1/4 red onion, sliced thin
  • 1 bunch cilantro
  • 1-2 limes, sliced into wedges
