Ingredients

  • Ingredients (serves 2-3)
  • 1 cup [200g] uncooked basmati rice (yields 3 cups [600g] cooked)
  • 2 1/2 cups [625ml] water
  • 1 medium [60g] carrot
  • 1 1/2 cups [90g] broccoli florets and stem (cut into cubes)
  • 1/2 cups [75g] green beans
  • 2 cups [140g] bok choy
  • 1/2 cup [75g] frozen peas and sweetcorn mix
  • 1/2 tablespoon + 1 teaspoon coconut oil
  • 1 tablespoon minced ginger
  • 2 - 3 tablespoons soy sauce (or try this homemade soyfree soy sauce)
  • Couple pinches Indian black salt (optional for an 'eggy' flavour)
  • 1/2 teaspoon sweet paprika
  • 1 teaspoon lemon juice
  • 1/2 tablespoon maple syrup
  • Salt and ground black pepper to taste
  • Chives or green onions for garnish
