A delicious recipeusing the seasonal vegetables. I am going to make the most out of this season by makinginteresting, yummy and healthy recipes that can be had along with Indian Flatbreads like Chapathi, Roti, Naan, Paratha, malabar Paratha and Pooris
Check out my other kurmarecipes here. This is a recipe that I found on the internet long back and this is as close as I got to the flavor I love in the restaurants
To make mixedvegetablekorma first, grind roasted gram, green chilies, dried red chilies, pearl onions, coconut pieces or grated coconut, cashew nuts, coriander seeds to a very fine paste
Add grindedcashew paste and mix well. Dip the vegetable ball in maida paste. Add mashed vegetable and add turmeric powder, Chilli powder, Garama masala mix well
and Vitamins C and B-complex. Potatoes are a great source of carbohydrates, protein, calcium, niacin. Potato korma(Alookurma) is a good accomplishment for Poori, chapati, idli,Appam and Dosa
By now the gravy would have thickened considerably, the vegetables would have been completely cooked, the raw smell would have gone and you can smell the aroma of the kurma
Some time back I happened to order a no onion, no garlic sidedishin a restaurant for phulkas and they served a very tasty dish simply called mixed veg curry , which looked creamy and rich with no onion s and taste of garlic
So I decided to try another gravy with raisin, Red capsicum. Drain the water and keep it aside. After moving out to Singapore I got it only maybe once or twice at the most
